Nutmeg is the dried seed of the fruit of the Myristica fragrans tree, originally from the Molucca Islands, although today its cultivation has spread to tropical areas of Asia and Africa. It is commercially available in two forms: whole and ground. The whole version maintains better its organoleptic properties and is ground at destination as needed, while the ground version allows immediate and homogeneous dosage in mixtures and formulations.
From an analytical point of view, its profile is characterized by a high concentration of essential oils, among which myristicin stands out, followed by eugenol, safrole and elemicin. These compounds not only define its warm, slightly sweet and spicy aroma and flavor, but are also responsible for its functionality in complex food matrices. For optimal use in production lines, ground nutmeg is recommended to be added at intermediate cooking stages, allowing a greater aromatic fixation. In its whole version, it is advisable to grind just before addition if the organoleptic impact is to be maximized.
